Easy Potato Curry

This is couldn’t be simple! Yes, I mean it. Amma used to make this potato curry when there was no onion/tomato left or when she wanted something so easy to cook.

And if you have boiled potatoes then, you are done with this in less than 15 minutes! 😀 And this goes well with dosa, chapati, puri, idiyappam etc.

Very mildly spiced, not masaledar this curry is sure to please your taste buds too.  Trust me, it tastes good 🙂

Potato curry :

  1. Boiled Potatoes    : 2 medium, mashed well
  2. Coconut oil/Oil    : 1 tbsp
  3. Mustard seeds     :1/2-3/4 tsp
  4. urad dal             : 1/4 tsp
  5. Curry leaves        : handful
  6. Turmeric Powder  :1/4 tsp
  7. red chili powder    :1/2 -3/4 tsp
  8. water                : 1 cup or more
  9. Asafetodia/hing  : 1/4 tsp
  10. Red Chilli          : 3-4 no
  11. salt                  : as required

Method:

  1. In a heavy bottom, add oil and once its hot add mustard seeds, let it splutter.
  2. Follow this by urad dal, dry red chilies, curry leaves.
  3. Now, bring down the flame to lowest possible and immediately add turmeric, red chili powder, asafetida and give a quick mix for few seconds (take care not to burn).
  4. Add the mashed potatoes, water and mix well. Add required salt as well.
  5. Bring to boil for few minutes and then switch off. Serve hot!

Notes:

  1. Make sure not to burn the powders, you can also take out the pan from flame and proceed.
  2. This tastes well in coconut oil.
  3. Do not feel stingy in adding curry leaves 🙂
  4. the curry will thicken , so add water accordingly.
  5. Adding more red chili powder is not recommended.
