Mint/Pudina Chutney

Food that looks mind blowing need not be healthy  also food that is healthy need not be tasty too. It’s a universal problem. But, this is not the case always 😉  you could make healthy yet tasty dishes in no time.

This Mint chutney is one of that kind, I tasted this recipe years back when my cousin S’s maid mayaakka made this. This recipe is a sure keeper for those who dislike the raw taste of mint, healthy in its own way you could also skip roasting part( but I recommend to roast as that’s the taste giving process for this recipe 😛 )

Remember to clean and pick the mint leaves with hands, wash them thoroughly to avoid any dirt.

Ingredients:

  1. mint leaves                                                                    : 1.5cup/1 whole bunch cleaned
  2. garlic  cloves                                                                  : 12-15 no
  3. ginger                                                                               :1/4″ piece
  4. tamarind                                                                          : a small gooseberry size
  5. salt                                                                                     : as required
  6. Red chilli powder                                                            : 1/2 tsp

tempering:

  1. mustard seeds                                                                  :1/2 tsp
  2. urud dal                                                                             : 1/4 tsp
  3. Red chillies dried                                                             : 5-6 no
  4. coconut oil                                                                         :3-4 tbsp or more

Method:

  1. Take the clean and picked leaves , along with garlic cloves, ginger, salt, tamarind, red chilli powder, in a mixer and grind into a fine paste.
  2. Do not add any water, the mint leaves will ooze out water .As you grind you can see its forming like a paste.
  3. Now heat a pan, add oil once hot add things mentioned under tempering.
  4. To which add mint paste and saute well in medium to low flame.
  5. The chutney will start changing its color to dark green and will be dry compared to what we have initially added , this process will take about 10 -15 minutes in low -medium flame)
  6. Add 1-2 teaspoon of oil if necessary. Switch off the flame and serve with other dishes.
